Thai Rice Sauce

It was wonderful to have Sasha and Justin here, giving us a preview of the show they will be doing in Poland and Germany the next couple of weeks at the invitation of the State Department.

I was far away when Doug Davis was here last year. Happy to be back from Thailand in time to hear him this weekend!

Lunch on the terrace at the Mandarin Oriental in Bangkok was an event, bright sunshine, sudden pouring rain and steamed sea bass that was both delicate and incendiary. The waiter warned me. The plain rice, never my favorite, was essential.

Make some plain rice. Thai sauce: 1 tablespoon minced bird chiles or equivalent, 2 tablespoons fish sauce (nuoc mam), 3 tablespoons minced garlic and 4 tablespoons fresh lime juice. If it is unbearably hot, double the other ingredients. Steam the fish gently and douse it ungently.
