Bacon-wrapped Dates Stuffed with Chorizo

I had been to Spain several times and had been totally seduced by the bar scene in Madrid. The line-up of thirty or so incredibly delicious small tasty tastes to accompany thirty glasses of wine - no, not really - but at least a few glasses spaced over a four hour span before going to dinner at 11:00 or 12:00.

One of the tapas I failed to encounter there was introduced to me by Ron and Martha Lowry, who worked with me in Winston-Salem back in the 80's!

Bacon-wrapped dates filled with chorizo.

Choose large pitted dates. Fill the dates with a small finger of Spanish chorizo; wrap in very thin bacon, secure with a toothpick and bake until the bacon is crisp.
