Coconut-encrusted Ice Cream

Guests at a beautiful Virginia cattle farm, the perfect dinner ended with pineapple coconut ice cream topped with golden raspberries and a small splash of Calvados.

The ice cream reminded me of Wil Wright's in Los Angeles in the fifties. The very best full fat ice cream. I was told by the shop-keeper that my favorite was also Marlon Brando's favorite - coconut with caramel sauce.

For another variation, scoop out balls of Haagen Dazs vanilla and hold in the freezer. In a 350 degree oven toast coconut flakes until golden. Stir frequently because they are easy to burn. Cool. Roll the ice cream in the coconut and serve with caramel sauce.

Trust me, it is delicious.
