Lemon soup - another of those cold ones! Don’t despair, cool weather is on the way!

Heat 6 cups chicken broth, preferably homemade of course, with 1/4 cup long-grain rice and a teaspoon of salt. Cook until rice is tender. Whisk 3 eggs with 1/4 cup of FRESH lemon juice, not ReaLemon, that unreal stuff in a bottle. Pour a little hot broth into the eggs, whisking all the while, then the rest. Let cool and refrigerate until ice cold. Check the salt level. Serve garnished with thin lemon slices and a sprinkle of chopped fresh oregano or parsley.
