Tomato Salad Squared

Once again approaching the end of tomato season with salty tears!

Slice four firm tomatoes and arrange in a wide bowl.

In the food processor, purée 4 or 5 cloves of garlic with a teaspoon of salt. Peel, seed and chop 2 big ripe beefsteak type tomatoes and add to processor bowl with a tablespoon of sherry vinegar. With motor running, pour in 1 cup of good olive oil to emulsify.

Pour over the sliced tomatoes, sprinkle on a bit of ground cumin or paprika and let stand at room temperature for thirty minutes or so before serving.
