Peanut Butter Sticks

With the loss of our incredible sycamore tree, it is hard to concentrate on recipes. But Johnny Burleson recently asked for this one.

Cut the crusts from a loaf of good bread and put them and the heels on one baking sheet. Cut each slice in half and then in finger-size pieces and place on another pan. Dry them thoroughly in a 200 degree oven, probably for a couple of hours. Crush the heels and crusts to make crumbs. I use the processor.

In the top of a double boiler over simmering water, heat a cup of creamy peanut butter with half a cup of peanut oil. Soak a dozen or so sticks at a time in the hot.mixture. Remove with a slotted spoon, letting drip over the pot. Coat with the bread crumbs and spread out to dry. 

You can eat them all immediately or store in an air-tight container.
