Fat Quesadillas

In a non-stick skillet, warm one side of large flour tortillas in olive oil. Oil side up, arrange slices of avocado on half of the tortilla, sprinkle with salt and cumin, chopped scallions, cilantro leaves and cheese. Fold over the other half and fry two at a time in the olive oil. Serve with your favorite salsa, red or green or both.
