Bubble 'n' Squeak
Roughly mix cooked shredded cabbage and mashed potatoes. Sauté some chopped onions in olive oil or butter or bacon fat. Add cabbage and potatoes, salt and pepper.
Brown, turn, brown, turn. Serve with anything or nothing. (I actually had this as a side for lunch at the uppity Connaught in London).
You can, of course, add other left over vegetables like carrots, turnips, peas but this was John’s favorite.
